Strawberry and Almond Custard Tart

A light custard cream tart made with almond milk.
Made without milk.

Material

【tart crust】

  • Salad oil / 30 g
  • Whole egg (net) / 50g
  • Granulated sugar / 40g
  • Cake flour / 150g

【custard】

  • Egg yolk / 40g
  • Granulated sugar / 50g
  • Cake flour / 20g
  • Rich Almond Milk (made with fresh almonds) / 200g

【topping】

  • Strawberry / 24 pieces

Recipe

【Tart】
1. Mix salad oil, whole eggs and granulated sugar.
2. Add the sifted flour, mix together and refrigerate for at least one hour.
3. Spread the mixture evenly with a rolling pin, spread it into a mold, and picket it.
4. Bake in a preheated oven at 180℃ for 20 minutes.

【Custard】
1. Mix the egg yolks with granulated sugar.
2. Mix the sifted flour into the (1).
3. Heat the almond milk in a saucepan to 60°C (140°F).
4. Add (3) to (1) and strain through a strainer.
5. Stir with a rubber spatula and heat.
6. When the mixture has thickened, transfer it to a vat and refrigerate.

【Finishing touches】
Spread the custard over the cups and top with strawberries and mint.
