Orange Sour Puff Chocolate

  • Couverture white chocolate / 95g
  • Coating Chocolate White / 95g
  • Fermentation Powder FD-R / 10g
  • (powder) Puff / 10g
  • Orange peel / 10g

Recipe

1. Chop and combine the two types of chocolate.
2. Melt [1] in a bowl over hot water.
3. Add the FD-R fermentation powder to [2] and melt.
4. When all the ingredients are melted, add the puffs and orange peel and stir to combine.
5. Pour the mixture into a sheet-lined baking pan.
6. When hardened, cut into desired size.
