Matcha cookies

Condensed milk is added to give the cookie the richness of milk. These cookies have a moist texture and a bittersweet taste.

Material(25 sheets)

  • Cake flour / 80g
  • Almond-poudre / 20g
  • Powdered green tea (steamed and dried before being stone-ground) / 5g
  • Unsalted butter / 50g
  • Granulated sugar / 30g
  • Sweetened condensed milk / 20g
  • (cow's) milk / 15g
  • Sugared red beans / 70g

Recipe

Preparation
Bring unsalted butter to room temperature.
Mix the sweetened condensed milk with the milk.
Sift together the flour, almond-poudre and matcha.

1. Make the unsalted butter into a pomade and mix with the granulated sugar.
2. Add the sweetened condensed milk and milk and mix.
3. Add the sifted flour, almond pudding and matcha and mix to combine.
4. Add the sweetened soybeans and mix.
5. Shape into bars about 4 cm in diameter, wrap in plastic wrap and freeze.
6. Cut into 25 pieces.
7. Bake in a preheated oven at 170℃ for 16 minutes.
