Lemon Cake with Cheese and Chocolate CoatingNEW

This is a tangy lemon cake made with yogurt paste.

  • ●Almond Powder / 10 g
  • ●Baking powder / 1.5 g
  • Whole eggs / 65 g
  • Granulated sugar / 30g
  • Honey / 10 g
  • Unsalted butter / 40g
  • Yogurt Paste / 5g
  • Lemon juice / 5g
  • Coated Chocolate (White) / 50g
  • Kiri Cream Cheese Powder / 5g
  • Pistachio / As needed

Recipe

Preparation
・Grease the pan with butter (not included in the ingredient list), dust with all-purpose flour, and tap out any excess flour.
・Combine the ingredients marked with ● and sift them.
・Bring the eggs to room temperature.
・Melt the unsalted butter and keep it warm.

1. In a bowl, combine the whole eggs (brought to room temperature), granulated sugar, and honey, and beat until soft peaks form.
2. Add the sifted dry ingredients and mix with a rubber spatula until no dry spots remain.
3. Add the melted butter and lemon juice, and mix. Add the yogurt paste and mix.
4. Once the batter reaches a consistency where it drips in ribbons, pour it into a lemon-shaped mold and bake in an oven preheated to 180℃ for 15 minutes.
5. Once baked, remove from the pan and let cool.
6. Add Kiri Cream Cheese Powder to the melted coating chocolate and mix.
7. Spread [7] over the surface of the lemon cake, top with pistachios, and let set.
