  • Whole egg / 100g
  • Caster sugar / 100g
  • Honey / 20g
  • Water / 50g
  • Cake flour / 120g
  • Baking powder / 2g
  • Sweet white bean paste / 180g
  • Bitter Caramel N / 16g
  • Fine snow / 1g
  • Water / 3g
  • Whip cream / 46g
  • Granulated sugar / 2.5g
  • Trehalose / 1.5g

Recipe

☆Skin
1. Add the top white sugar to the whole egg and mix with a whipper until a white streak forms.
2. Add honey and 40g water.
3. Add the sifted flour and baking powder and mix.
4. Let rest in the refrigerator for 1 hour.
5. Add 10g of water and mix.
6. Pour the batter into the pan and bake on both sides. (Immediately after baking, cover with plastic wrap to prevent drying out.

★Bitter caramel sauce
Dissolve Fine Snow in water, add to pan with bitter caramel and heat until thickened.

★Whipped cream
1. Mix granulated sugar and trehalose into powder.
2. In a bowl, whip the whipped cream with a whipper.

★Assembling
1. Put 30g of bean jam, 3g of caramel sauce, 5g of whipped cream and cover with another sheet.
