Material

【Puff】

  • Cake Flour / 100%
  • Whole egg / 275%
  • Margrine / 130%
  • Neo SP-RS / 3%
  • Water / 190%

【Custard Cream】

  • Millk / 65%
  • Egg yolk / 12%
  • Granulated sugar / 12%
  • Corn starch / 6%
  • Caramel Milk 24.5kg / 5%

Recipe

【Puff】
1. Put the water and margarine in a pot. And boil it.
2. Add flour, Neo SP-RS and heating and mixing.
3. Add whole egg.
Oven tempratuer 200℃ 
Baking time 30minutes

【Custard cream】
1. Combine the egg yolk and granuated sugar in a bowl.
2. Add the cornstarch gradually to the bowl.
3. Heat milk until 80℃.
4. Add milk to the bowl gradually. Then strain it to a pan.
5. Reheat and continue to cook while stirring constantlly until thick.
6. Remove from heat if it get gloss. Then add Caramel Milk.
