AlmondMilk and Onionsoup

This simple soup is made with slow-fried onions and thick almond milk. Only vegetable ingredients are used.
Serve cold in summer or warm in winter.

Material

  • Rich Almond Milk (made with fresh almonds) / 1000g
  • Water / 300g
  • Onion (edible plant, Allium cepa) / 350g
  • Olive oil / 10g
  • Powdered vegetable bouillon / 15g
  • Table salt / 1.5g
  • White pepper / 0.05g

Recipe

1. Peel and chop the onion.
2. Spread olive oil in a frying pan and saute 1 slowly over low heat.
3. Transfer 2 to a saucepan, add water and powdered vegetable stock, and bring to a simmer.
4. Add the almond milk and heat until just before boiling.
5. Add salt and pepper to taste.
