Caramel DAIFUKU

Bitter sweet caramel flavor by adding a Bitter Caramel Powder to white bean paste.

Material

【White bean paste mixture】

  • White bean paste / 228g
  • Bitter Cramel Powder / 12g

【Rice dough】

  • Glutinous rice / 100g
  • Sugar / 70g
  • Trehalose / 10g
  • Water / 200g
  • Potato starch / Proper quantity

Recipe

【White bean paste mixture】
1. Mix Bitter Caramel Powder and white bean paste together.
2. Divide into 12 equal parts. Set aside for now.

【Outside rice dough】
3. Combine refined rice flour, granulated sugar, trehalose and water in a heatproof bowl.
4. Heat mixtur in microwave at 800W for 2minutes. .
5. Stir after heated.
6. Repeat process 3times.
7. Preare a flat surface, sprinkle potate starch no top. (Use when necessary cause rice dough is sticky)
8. Take rice dough out bowl and put on flat surface.
9. Divide into 12 equal parts. Wrap rice dough around white bean paste, till fully covered.
10. Shape into a ball. to contain the bat of potato starch.
