Caramel cream puff

Use our caramel not only puff but also cream.

Material

【Puff】

A

  • Margarine / 130g
  • Water / 190g

B

  • Bread flour / 100g
  • Caramel Powder / 10g

C

  • Whole egg / 275g

【Custard cream】

  • Fresh cream / 200g
  • Caramel Milk 24.5kg / 60g
  • Trehalose / 10g

Recipe

【Puff】
1. Put margarine and water to a pot. And boil it.
2. Remove from heat.
3. Mix berad flour and Caramel Powder.
4. Add to mixed powder to the pot. And mix well.
5. Reheat and continue to cook about 3 minutes.
6. Remove from heat.
7. Add 1/3 of whole egg and mix well. Repeat process 3 times.
8. .Put in a squeezing bag. And squeese to top of baking tray.
9. Moist with spray.
10.Bake 200℃-20minutes.

【Custard cream】
1. Add fresh cream, Caramel Milk and trehalose a bowl. And whip it up well.
2. Stuff this cream to the puff.
